Ohhhhhh how I LOVE Steel cut oats. One of my favorite breakfasts, especially in the winter. I usually make it the same every time but last night came across this amazing yet so simple Apple Pie Breakfastrecipe and had to try it this morning. It is as mouth watering as it looks! I am eating it as I post with a glass of hot lowfat eggnog soymilk. Total comfort! Before heading to yoga this morning I threw everything in the crockpot-total prep time 5 min. (I didn’t have apple juice in the house so I replaced that ingredient with a little natural applesauce, spoonful of pure maple syrup and dash of cinnamon. Really tricky to goof up this scrumptious recipe.) Upon returning from class the house smelled like baked apple pie! It’s so yummy i could eat it for dessert too. I can already imagine a scoop of Greek Yogurt or whipped creme on it!
This is great to throw in the slow cooker tonight on Christmas Eve if you’d like to start your Christmas morning with a healthy yet scrumptious breakfast (and perhaps indulge with your family a little later for Christmas Dinner.) Happy Hanukkah to those who celebrate! I love potato lakes, especially with Greek yogurt on top! I’ve made baked latkes before, but this recipe is new to me and gets rave reviews. Has anyone tried this recipe? I’m excited to bake these when I return from my weekend holiday-bday trip.
I suggest serving with Greek Yogurt and a side of homemade applesauce. Mmmmmm!!!
Cutting out carbs entirely but still want your latkes? See the Zucchini Latke recipe link below. It has cottage cheese in it and it sounds delicious!
Baked Potato Latke Ingredients:
2 pounds yellow-fleshed potatoes, such as Yukon Golds, peeled
3 medium shallots, halved and thinly sliced
1/2 cup pasteurized fat-free egg substitute, such as Egg Beaters or natural eggwhites
3 Tbsp matzo meal or bread crumbs
1 1/2 tsp dried thyme
1 tsp salt
1/2 tsp ground nutmeg
1/2 tsp ground black pepper
Preheat the oven to 375ºF. Spray a standard 12-indentation muffin tin with nonstick spray.
Use the large holes of a box grater to shred the potatoes. Working by small handfuls, squeeze the shredded potatoes over the sink to get rid of any excess moisture. Place in a large bowl.
Stir in the shallots, egg substitute, matzo meal, thyme, salt, nutmeg, and pepper. Divide the mixture into the 12 muffin indentations.
Bake 30 minutes. Spray the tops again with nonstick spray. Continue baking until browned and set, about 30 more minutes. Cool at least 10 minutes on a wire rack before serving. Makes two latkes per serving.

December 22, 2011 a beautiful and healthy baby girl is born. WELCOME TO THE WORLD BEAUTIFUL BABY AND CONGRATULATIONS MOMMY, DADDY, AND BIG BROTHER. I just received the most breathtaking picture update on Facebook and am so happy and excited for my friend. Her little baby girl is so precious and I feel so much joy for her and her family.
I met my friend during a brief period in my life where I spent a few months in Canada. I made two very special connections while in Canada, one of which was with this friend. (and the other happens to be due with her first baby this spring!) This friend has been the greatest inspiration in my yoga journey. I often wonder if I would be where I am today in both yoga and life in general had we not connected and crossed each others paths. She truly had an impact on my yoga practice, desire to explore new forms of yoga which in turn has lead me to follow the desire to become a birth doula, and had a meaningful impact on me that she probably never knew at the time. I am grateful for the difference she made. When I left Canada I wasn’t able to say goodbye to her. I vividly remember my call with her while I was on the road back to the states. I know the reason we never said goodbye to one another is because that door of friendship was not closing just because I was leaving! We are certain one day we will see one another again.
My friend’s baby was DUE on my birthday December 26 (I find that amazing, maybe it’s just me!) Today, December 22, she gave birth to a gorgeous baby girl. I am full of joy for their family! If you are reading this, my friend, I send you my love today and wish you and your family a wonderful new year with your new bundle of joy.
