This salad is ready in minutes, perfect for a healthy meal year round. I recently returned from the Belize Yoga Retreat and picked up the Flavors of Belize cookbook while I was there. It’s a gorgeous cookbook filled with beautiful pictures of recipes from Belize. It’s also the most extensive compilation of Belizean recipes.
Walking home from the Italian Market this morning I scored a box of 9 super ripe champagne mangos for $3.00 and 6 red peppers for $1.00 which made me remember this recipe. This salad is delicious, satisfying and so easy to put together quickly. The flavor is even better the longer it sits in the fridge.
