I’m just a little addicted to quinoa. Last fall I received Wendy Polisi’s The Quintessential Quinoa Cookbook filled with over 200 quinoa-inspired recipes. The book includes photographs of each recipe, nutritional information, and offers a huge variety of recipes including some vegan, gluten-free and sugar-free recipes.  The Quintessential Quinoa Cookbook includes breakfast, appetizers, soups & salads, entrees, sides, muffins, desserts and quinoa for kids.  It’s a complete recipe guide to cooking with quinoa.

What’s Quinoa? Quinoa is a complete protein, which means that it contains all the amino acids necessary for our nutritional needs. Complete proteins are rare in the plant world,  which makes quinoa a superior food.  Quinoa is Gluten-Free and packed with healthy protein,.  Quinoa is also high in fiber, iron and calcium, folic acid, potassium, vitamin E,  magnesium,copper, and beta carotene.  While low in calories and fat, it also provides eessential fatty acid that have been proven to benefit the immune response.

My favorite recipes from the cookbook include Quinoa with Spinach Kale Pecan Pesto, Crockpot Pear & Blueberry Crumble (I used Strawberries and blueberries), Quinoa Falafel, Slow cooker quinoa curried chickpeas and quinoa, chocolate cherry chip quinoa cookies and too many awesome quinoa salad recipes to list.  You’ve got to add Cooking Quinoa on Facebook and check out all of her newest creations!
